La Burtleina

La Burtleina is dedicated to the Bortellina from Piacenza, called “burtleina” in dialect. It’s a fried fritter, crispy outside and soft inside — halfway between an omelette and a savoury crêpe. It is made to order and stuffed with DOP cured meats from Piacenza such as coppa, salame and pancetta, or with traditional cheeses like gorgonzola and stracchino. With constant attention to the supply chain, to local excellence and to the original recipes, La Burtleina positions itself as an ambassador of Piacenza’s culinary culture, aiming to share and celebrate it both in Italy and abroad.
